Puer and Rishi Mushroom Chicken Soup

~Ingredients
* Rishi mushroom 5 medium size pieces
* Bamboo shoots or stalk 3~4 medium size pieces
* Organic chicken leg 1 (8oz)
* Goji Berry 3~4g
* Wild Tea Qi Award Winning Puer Ball 1 (8g)
~Seasoning
* Sea salt
* Coconut oil (optional)



~Method
* Soak rishi mushrooms and bamboo shoots until soft then cut into proper size.
* Make Wild Tea Qi Award winning Ancient Phoenix Puer Tea ball 8g or 2 Large Discs, with 400cc boiling water, strain tea after 4 minutes.
* Combine rishi mushrooms, bamboo shoots, chicken leg and Puer tea into saucepan, add 400cc water and cook until water comes to a boil.
* Season to taste and ready to serve

This is the way we made tradition Chinese chicken soup, the point is to retain the original essence!
In Traditional Chinese Medicine, we usually refer to the yin and the yang principle. Sometimes we can also refer to Yang as hot, fire and Yin as water and cooling. The body’s Yin and Yang must be kept in balance. We consider the summertime Yang and so it is easy for the body’s balance to gain Yang imbalances. The hot weather makes it easy to sweat causing the body’s blood becomes thinner or weaker. Therefore in Traditional Chinese Medicine during these times it is suggested that you up your protein intake in order to correct to bring balance to your body’s Yin and Yang as with we TCM believes in adjusting your diet to the seasons.
The soup we are cooking here is a super nourishing, medicinal recipe of Wild Tea Qi Ancient Phoenix Organic Fermented Puer Tea, organic chicken (on the bone), rishi mushrooms, bamboo shoots, and goji berries.
This soup has a variety of health benefits such as boosting the immune system, boosting your Qi, nourishing the liver and kidneys, anti-aging, regulating blood sugar, and is known to have anti-cancer benefits. In addition, it will warm the body and is safe for diabetics. The chicken is rich in protein and amino acids. The mushrooms benefit the liver, kidney, spleen and stomach as well as boost the immune system. Rishi mushrooms can clear phlegm and can have a detoxifying effect. Goji berries are powerful immune system builders; nourish the body’s Qi, as well as the liver and kidney function. They are also anti-aging, and warming for the body.
Bamboo shoots are soothing for the stomach, contain fiber and make a nice taste!
The last ingredient is the most critical which is Wild Tea Qi’s award winning Ancient Phoenix Fermented Puer Tea. Using a typical Puer will not work, as the flavor of this Puer tea has a rich, thick taste which will really affect the taste and texture of this soup. This Puer tea has a variety of health benefits such as improve digestion as it is rich in beneficial bacteria as it is fermented. It is also rich in vitamin C, regulate blood sugar and aid in weight loss.

The Puer tea when combined with the chicken can help reduce the fat and grease of the chicken naturally. Cook the soup on a low heat, allowing to cook slowly.
All the ingredients are essential, the Puer for the thick, rich taste, the chicken for not only the protein, but also cooking with the bone in will add to the rich flavor. The rishi mushroom offer a forest rich, taste, the goji berries add a slight sweetness and the bamboo shoots offer a light crunch, making a perfect summer soup. Enjoy!

  • I read the recipe for your Puer and Rishi Mushroom Chicken Soup and thought it to be a very creative way of using Puer tea.

    There are a few things about the recipe which are not clear to me and I have listed them below.

    1.) I am not sure how much Ancient Phoenix Puer Tea should be used.

    In the “Method” section, the following instructions are given:

    “Make Wild Tea Qi Award winning Ancient Phoenix Puer Tea ball 8g or 2 Large Discs, with 400cc boiling water, ……..”

    One Tea Ball weighs 8 g BUT two Large Discs of Ancient Phoenix Puer weigh 22g since one disc weighs 11g (http://wildteaqi.com/store/#!/~/product/category=3372689&id=14622550).

    - Is the quantity of Puer to be used 8g OR 22g?

    2.) Coconut Oil is listed as an optional ingredient. What is the Coconut Oil used for and how much Coconut Oil should be used?

    3.) The ingredient list refers to “Seasonings” but does not mention any besides Sea Salt. What other seasonings would you recommend to enhance this recipe?

    4.) Is there a substitute for Bamboo shoots/stalks?

    5.) How many servings does this recipe make (i.e. enough for one person, two people etc.)?

    I’m so glad to hear from you! It’s really happy to know that you would like to try my recipe. Please check my answer as follow:
    1. About how much Ancient Phoenix Puer tea should be used, it’s depend on how much water you want to put in and how many people are going to drink it.
    One person only need one tea ball(8g) or One Large Discs(11g) with 400cc boiling water.
    But remember if you have more than 3 , less than 10 people to drink this soup, the maximum puer quantity you should put 3 of tea ball(24g) or 3 of large discs(33g), don’t put more than this quantity, otherwise, the soup could become bitter.
    Because of our large discs flavor is little big different with our balls, so the quantity require is different.

    2. About Coconut oil, if you like to use coconut oil to cook, then you can use it, if not then forget it. It’s depend on personal tastes. But Coconut oil is the best oil cook with meet and this oil can reduce the risk of heart disease and remove excess fat from meat. And Cooked Puer tea also have similar efficacy as coconut oil, and puer can lowering blood lipids, so put coconut oil with puer tea together to cook with meet which is a very healthy way to make your meet dishes more healthy.

    In this soup, if you cook for one person, only need put 1 Teaspoon of coconut oil. If you cook more than 3, less than 10 people, then you can put 3-5 teaspoon of coconut oil.

    3. Remember 400cc boiling water only for 1~2 person, if you have more than 3 people to join this dish, you should put 500cc~1000cc of water.

    4. About the ingredient, my suggestion only salt, don’t put any other things, because of this dishes we want to keep soup as much pure fresh chicken flavor as we can, if we put any other ingredient, could claimed the flavor of chicken soup. Only one thing you can put it in which is Ginger, Ginger can reduce meet smell. And cook Pu’er tea with ginger together also is traditional Chinese diet. Puer with Ginger together can reduce heat, detoxification, digestion, fatty, diuresis, laxative, expectorant, expelling wind solution table, thirst-quenching fluid, the benefits of strength, longevity and other effects and warm stomach,sweating, vomiting, carminative, to avoid the stench eliminate edema functions.
    Ginger 5-10g for 1000cc of water. 3-5g for 400cc-500cc of water.

    5. If you can’t find Bamboo shoots, you can put any kind of mushroom as you want, mushroom cook with chicken can make your body regulate metabolism, heat, prevention of gynecological diseases and other effects.
